Dynamics and biodiversity of populations of lactic acid bacteria and acetic acid bacteria involved in spontaneous heap fermentation of cocoa beans in Ghana

Article Abstract:

A multiphase approach, encompassing both microbiological and metabolite target analyses, was used to study the Ghanaian cocoa bean heap fermentation process. A limited biodiversity and targeted population dynamics of both lactic acid bacteria (LAB) and acetic acid bacteria (AAB) during fermentation was revealed through a culture-dependent and culture-independent approach.

Kinetic analysis of bifidobacerial metabolism reveals a minor role for succinic acid in the regeneration of [NAD.sup.+] through its growth-associated production

Article Abstract:

Bifidobacterium langum strain BB536 and Bifidobacterium animalis subsp. lactis strain Bb12 are kinetically analyzed in detail using in vitro fermentations to obtain more insight into the metabolism and production of succinic acid by bifidobacteria. Changes in end product formation in strains of Bifidobacterium could be related to the specific rate of sugar consumption.

Biodiversity of exopolysaccharides produced by streptococcus thermophilus strains is reflected in their production and their molecular and functional characteristics

Article Abstract:

Lactic acid bacterium strains isolated from European dairy products were identified as streptococcus thermophillus and were characterized by bacterial growth and exopolysaccharide (EPS) capacity. EPS production was found to be strain dependent but no relationship could be established between viscosity and EPS production in fermented milk medium.
