Research has been conducted on the changes in the intracellular pH values of lactic acid bacteria. The effect of the rapid drop in the extracellular pH on these bacteria has been examined.

Differential expression of proteins and genes in the lag phase of Lactococcus lactis subsp. lactis grown in synthetic medium and reconstituted skim milk

Article Abstract:

Protein and gene expression in Lactococcus lactis subsp. lactis CNRZ 157 in the lag phase in comparison to the exponential and stationary growth phase is investigated. Good correlation between protein and gene expression studies was demonstrated for several differentially expressed proteins including nucleotide biosynthetic enzymes, adenylosuccinate synthase (PurA), aspartate carbamoyl transferase (PyrB) and others.

Use of fluorescence ratio imaging for intracellular pH determination of individual bacterial cells in mixed cultures

Article Abstract:

Research was conducted to examine the development of a rapid method for measuring intracellular pH (pH(sub i)) in single bacterial cells using Lactobacillus delbrueckii subps bulgaricus and Listeria innocua as test organisms. Fluorescence microscopy and ratio imaging were used in the measurement of pH(sub i) in the organisms. Results indicate that the experimental approach allows a rapid pH(sub i) measurement of single bacterial cells in time-lapse studies.
