Detection of Pediococcus spp. in brewing yeast by a rapid immunoassay

Article Abstract:

Amembrane immunofluorescent-antibody test (MIFAT) was developed to monitor the presence of Pediococcus species in brewery pitching yeast especially during recycling. This laboratory study proved that these cocci could be detected by MIFAT subject to centrifugation factors such as the centrifugal force used and duration of centrifugation. Fluoresceinated indicator antibodies enabled detection of the centrifuged bacteria within a shorter period of time compared to the usually used microbial monitoring methods.

Urea hydrogen peroxide reduces the numbers of Lactobacilli, nourishes yeast, and leaves no residues in the ethanol fermentation

Article Abstract:

Results demonstrate that the growth of five Lactobacilli species in a wheat mash is affected by urea hydrogen peroxide (UHP) in the presence of yeast. Data show that Lactobacilli growth can be contained by UHP at 30 millimole per liter of mash to favor vigorous fermentation by the yeast.

A strain of Enterococcus faecium (18C23) inhibits adhesion of enterotoxigenic Escherichia coli K88 to porcine small intestine mucus

Article Abstract:

Results demonstrate that live Enterococcus faecium inhibit adhesion of Escherichia coli to pig intestine mucus in a dose dependent manner. Both cell and cell culture supernatant are inhibitory and the mechanism of inhibition is likely to be due to steric hindrance.
