Lactobacillus coryniformis subsp. coryniformis strain Si3 produces a broad-spectrum proteinaceous antifungal compound
Article Abstract:
Research is presented on the antifungal activity spectrum of the Si3 strain of Lactobacillus coryniformis subsp. coryniformis, specifically its inhibition of Aspergillus- and Fusarium-type molds in dual-culture agar plate assays. Ethanol, added to the growth medium, was found to prevent antifungal activity decline; heat treatment and autoclaving did not reduce the activity nor render it unstable.

The identification and chemical characterization of four antifungal substances, 3-(R)-hydroxydecanoic acid, 3-hydroxy-5-cis-dodecenoic acid, 3-(R)-hydroxydodecenoic acid and 3-(R) - hydroxytetradecanoic acid from lactobacillus plantarum MiLAB 14 are reported.

Dekkera bruxellensis and Lactobacillus vini form a stable ethanol-producing consortium in a commercial alcohol production process

Dekkera bruxellensis and Lactobacillus vini that dominate the ethanol production process is analyzed and the high number of lactic acid bacteria are investigated at a Swedish alcohol production plant. It is observed that the product quality, process productivity and stability are high.
