Article Abstract:
The thermophilic bacterium, Bacillus thermoantarcticus, produces 2 microbial exocellular polysaccharides, EPS1 and EPS2, which contain sulfate groups. The presence of mannose as the carbon and energy source increases the yield of the EPS. EPS1 is composed of 4 different alpha-D-mannoses and 3 different beta-D-glucoses which is related to xanthan polymers. EPS2 consists of 4 different alpha-D-mannoses and some amount of pyruvic acid. EPS1 represents 27% of the total carbohydrate fraction, whereas EPS2 represents 71% of the total fraction.

Article Abstract:
The production of two different epoxypolysaccharides (EPSs) by Lactobacillus pentosus LPS26, a strain isolated from a natural fermentation of olives, is studied. The analysis has shown that culture conditions have a major impact on the type and concentration of EPS produced by strain LPS26 and these conditions should be selected carefully for optimization and application studies.

Article Abstract:
Research reveals that nutritional factors exert a strong influence on the yield and nature of the exopolysaccharides produced by Gluconacetobacter xylinus I-2281. Data indicate that fructose and sucrose are the appropriate substrates for gluconacetan production, while glucose is not. Furthermore, in G. xylinus I-2281, production of biomass and exopolysacchardies is dissociated.
