Characterization of two nisin-producing Lactococcus lactis subsp. lactis strains isolated from a commercial sauerkraut fermentation

Article Abstract:

Screening of isolates collected from sauerkraut fermentation yielded two Lactococcus lactis subsp. lactis strains, NCK400 and LJH80, which were able to produce nisin. LJH80 was morphologically unstable and gave rise to to nisin-producing derivatives which could be distinguished by their plasmid and genomic DNA profiles. NCK400 did not harbor plasmids, indicating that the nisin structural gene was chromosomally integrated. Hybridization patterns using the structural gene for nisin as probe confirmed that the isolates obtained in this study were unique.

Antimicrobial action of nisin against Salmonella typhimurium lipopolysaccharide mutants

Article Abstract:

The antimicrobial effect of nisin on lipopolysaccharide (LPS) mutants of Salmonella typhimurium was examined. Parental strains were found insensitive to the antibiotic, although LPS mutants exhibited nisin sensitivity. The results indicate that the core oligosaccharide in the LPS of the outer membrane plays a role in the resistance of S. typhimurium to nisin. The findings also suggest that the spectrum of nisin may be extended to gram-negative bacteria by altering the outer cell membrane by mutations or by chemical treatment with chelating agents.

DNA fingerprinting of lactic acid bacteria in sauerkraut fermentations

Article Abstract:

The DNA fingerprinting analysis of some species of lactic acid bacteria from commercial fermentations is presented. A diverse variety of species of lactic acid bacteria present in sauerkraut fermentations are reported.
