Article Abstract:
A study was conducted to clone the Aspergillus oryzae gene encoding a prolyl dipeptidyl peptidase (DPPIV) and to examine the peptide profiles of a wheat gluten-containing medium hydrolyzed by wild-type or dppIV disruptant strains. The RNease total RNA purification kit was utilized to determine total RNA from A. oryzae TK3 mycelium. Results indicated that the disruption of the dppIV gene eliminated all detectable prolyl dipeptidyl peptidase activities.

High-performance liquid chromatography suggests a molecular weight of 6,500 Da for acidocin A, a bacteriocin isolated from Lactobacillus acidophilus TK9201. Oligonucleotide probes based on the sequence of first 16 amino acids on the N terminus of the acidocin A help identify the acidocin A structural gene acdA. An immunity function of acidocin A is encoded by an additional open reading frame ORF2 in acdA.

Article Abstract:
The influence of the simple and complex basic components of a fermentation medium on the surface properties of Lactobacillus acidophilus NCC2628 is analyzed using electrophoresis, interfacial adhesion and X-ray photonelectron spectroscopy and by transmission electron microscopy. The results show that expression of the S-layer protein is dependent on the protein source of the fermentation medium.
