Characterization of a thermoacidophilic L-arabinose isomerase from Alicyclobacillus acidocaldarius: Role of Lys-269 in pH optimum
Article Abstract:
The araA gene encoding L-arabinose isomerase (AI) from the thermoacidophilic bacterium Alicyclobacillus acidocaldarius (AA) is cloned, sequenced and expressed in Escherichia coli and the role of Lys-269 in pH optimum is investigated. The results have shown that the position corresponding to the Lys-269 residue of AAAI plays a vital role in the determination of the pH optima of homologous AIs.

Alicyclobacillus acidocaldarius thermophilic esterase EST2's activity in milk and cheese models
Article Abstract:
The behavior of thermophilic esterase EST2 from Alicyclobacillus acidocaldarius in milk and cheese models is investigated. The results have indicated that EST2 display higher esterase activity than EstA and both esterase and thioesterase activities measured in milk and cheese matrix are much greater than the activities of the controls.
