Biocontrol of Listeria monocytogenes on fresh-cut produce by treatment with lytic bacteriophages and a bacteriocin

Article Abstract:

The authors describe their study of Listeria monocytogenes. They have determined the survival and growth of L. monocytogenes on fresh-cut honeydew melon and apple slices at an abusive temperature, and have investigated the effectiveness of lytic phages in controlling L. monocytogenes contamination on fresh-cut fruits.

Role of Listeria monocytogenes sigma (super)B in survival of lethal acidic conditions and in the acquired acid tolerance response

Article Abstract:

Research has been conducted on lethal acid resistance in food-borne pathogen Listeria monocytogenes. The role of stress-responsive sigma (super)B factor, encoded by sigB, in growth phase-dependent resistance and adaptive acid tolerance in L. monocytogenes has been investigated, and the results are reported.

Differences in susceptibility of Listeria monocytogenes strains to sakacin P, sakacin A, pediocin PA-1, and nisin

Article Abstract:

The authors describe the study of Listeria monocytogenes strains collected from food. The strains have been analyzed for susceptibility to the class IIa bacteriocins sakacin P, sakacin A, pediocin PA-1 and class I bacteriocin nisin, and the susceptibility patterns for these strains have been determined.
