Article Abstract:
A large collection of lactobacilli has been screened for strains producing exopolysaccharides from sucrose. One of these strains was identified as Lactobacillus reuteri LB 121. This strain was found to synthesize large amounts of water-soluble exopolysaccharides with both glucose and fructose as its constituents. Biochemical and mutational identification of the biosynthetic enzymes involved and structural characterization of the glucan and fructan synthesized by the strain were reported and discussed.

Article Abstract:
The culture conditions that influence the molecular weight properties of hyaluronic acid (HA) generated by Streptococcus zooepidemicus were examined using a batch culture containing a complex medium with glucose and yeast extract. Results show that the inherent variability of biological processes of HA-containing substances are hindrances to achieving repeatable data. Furthermore, the culture of hydrogen-ion concentration had minimal effect on the rate of production of the bipolymer.

Article Abstract:
The strain-specific differentiation of lactococci in mixed starter culture populations was studied using randomly amplified polymorphic DNA-derived (RAPD) probes. The RAPD was utilized as a screening technique to identify potential strain-specific markers. Results show 100% of the target strain are without cross-reactivity to the other strains. The probes for the strains successfully detected their targets in blended cultures.
