Three simple but tasty casserole dishes that are low in calories are presented. Recipes include mushroom manicotti with fat-free ricotta and mozzarella cheeses, chili mac and cheese with reduced-fat cheddar cheese, and chicken, barley and vegetable stew, made with skinless chicken breasts.
